Savor our budget-friendly vegetarian borlotti bean salad!
Ingredients:
  • 3 x 400g cans borlotti beans (see note), drained, rinsed
  • 1/2 red onion, thinly sliced
  • 20.00 ml red wine vinegar
  • 18.20 gm extra-virgin olive oil
  • 30g baby rocket leaves
Instructions:
  • In a bowl, mix together beans, onion, vinegar, oil, salt, and pepper. Gently toss until well combined. Cover and let sit at room temperature for 20 minutes to allow the onion to soften and flavors to meld.
  • Combine rocket leaves with other ingredients and gently mix together. Serve and enjoy.
