Tender skirt steak with bourbon-infused onions, a flavorful sandwich sensation.
Ingredients:
  • 1 lb beef skirt steak
  • Salt and freshly ground black pepper
  • 1 large red onion, sliced
  • 2 cloves garlic, finely chopped
  • 1 cup halved cherry tomatoes
  • 1/4 cup Progresso™ beef-flavored broth (from 32-oz carton)
  • 3 tablespoons bourbon
  • 8 potato rolls, split
Instructions:
  • Season both sides of the steak generously with salt and pepper. Heat oil in a large skillet over medium heat. Cook the steak for 3 to 5 minutes per side, or until nicely browned. Transfer the steak to a cutting board.
  • Sauté onion in a skillet until softened, around 3 to 5 minutes. Add garlic and tomatoes, cook until tomatoes start to brown, about 2 to 3 minutes. Remove skillet from heat, then pour in broth and bourbon. Stir well, return to heat, and cook for 1 more minute until broth reduces by half. Season with salt and pepper to taste.
  • Slice the steak thinly against the grain. Fill the rolls generously with the steak slices and then top them with the flavorful onion-tomato mixture.
