Create colorful mini cupcakes using Betty Crocker Super Moist cake mix and vibrant decorations to support Box Tops for Education.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • Gel food colors (neon pink, classic yellow, neon green, classic blue)
  • 1 tub (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • Betty Crocker™ Decorating Decors multicolored nonpareils
Instructions:
  • Preheat oven to 350°F for all pans and generously spray 60 mini muffin cups with cooking spray.
  • Prepare the cake batter following the instructions on the box. Divide the batter evenly among 4 small bowls, approximately 1 cup in each. Add 1/4 teaspoon of food color to each bowl and mix until well combined. Fill each muffin cup with 1 level measuring tablespoon of batter, creating 15 cupcakes of each color.
  • Bake for 11 to 14 minutes until a toothpick inserted in the center of the cupcake comes out clean. Allow to cool for 5 minutes, remove from pan, and let cool completely for about 10 minutes.
  • Spread the frosting generously over the top and sprinkle with nonpareils for a delightful finish. Cover loosely before storing.
