Braised Brussels Sprouts

Tangy cranberries, crunchy walnuts, and hearty Brussels sprouts collide in a quick and delicious dish ready in just 30 minutes.
Ingredients:
  • Olive oil cooking spray
  • 1 lb fresh Brussels sprouts, halved
  • 1/2 cup white wine
  • 1/2 cup Progresso™ chicken broth (from 32-oz carton)
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 2 tablespoons sweetened dried cranberries, chopped
  • 2 tablespoons chopped walnuts
Instructions:
  • Heat a heavy-bottomed stockpot over medium heat for about 5 minutes, or until it is very hot.
  • 1. Coat a stockpot with cooking spray and sauté Brussels sprouts for 3 to 4 minutes until golden brown.​​ 2. Pour in wine, then add broth, salt, and pepper.​​ 3. Cover and simmer for 5 minutes. ​​
  • Uncover and stir occasionally, until all liquid has evaporated.
  • Combine butter, cranberries, and walnuts in a saucepan. Cook until the butter melts, then continue to cook for 2 to 3 minutes. Remove from heat and transfer to a serving dish. Enjoy immediately.
