Indulge in a rich dessert drizzled with brandy sauce.
Ingredients:
  • 250g pitted dates, chopped
  • 2.50 gm bicarbonate soda
  • 250ml water
  • 125g butter, softened
  • 220g caster sugar
  • 2 eggs
  • 225g self-raising flour
  • 150g pecan
  • Cream or ice cream to serve
  • 110g caster sugar
  • 100ml water
  • 80ml brandy
Instructions:
  • Preheat your oven to 180°C. Grease a 20cm springform tin and line the base with baking paper.
  • In a small bowl, combine dates with bicarbonate soda and pour over boiling water. Allow to cool.
  • In a medium bowl, use an electric mixer to beat butter and sugar until pale. Add eggs one at a time, beating well after each. Fold in sifted flour, nuts, and dates. Transfer batter into dish and bake for 40 minutes or until a skewer comes out clean. Pour hot syrup over pudding and let it sit for 15 minutes. Serve warm or cold with cream or ice cream. Enjoy!
  • In a small saucepan over low heat, combine butter, sugar, and water. Stir until the sugar is dissolved, then simmer for 5 minutes. Remove from heat and stir in the brandy.
