Breaded Chicken with Tomatoes

30-minute cheesy breaded grilled chicken topped with fresh oregano - a quick and delicious family dinner!
Ingredients:
  • 4 boneless skinless chicken breasts (1 lb)
  • 1/2 cup Progresso™ panko crispy bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons olive or vegetable oil
  • 3 large tomatoes, chopped (3 cups)
  • 2 medium green onions, chopped (2 tablespoons)
  • 1 clove garlic, finely chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon chopped fresh oregano leaves
Instructions:
  • Place each chicken breast between sheets of plastic wrap or waxed paper and gently pound with a meat mallet or rolling pin until 1/4 inch thick.
  • Combine bread crumbs, cheese, salt, and pepper in a shallow medium bowl or pie plate. Press crumb mixture onto both sides of the chicken to coat evenly.
  • Heat 2 tablespoons of oil in a 12-inch nonstick skillet over medium-high heat. Saute the chicken for 6 to 10 minutes, flipping once, until it is golden brown on the outside and cooked through. Remove the chicken from the skillet and cover to keep warm.
  • In a skillet, heat the remaining 1 tablespoon of oil. Add 2 cups of tomatoes, onions, and garlic; sauté for 2 minutes. Stir in the vinegar and cook for an additional 30 seconds. Take the skillet off the heat and mix in the remaining 1 cup of tomatoes and oregano. Serve over chicken and top with fresh oregano sprigs for garnish, if preferred.
