Elevate your baked beans on toast with a perfectly cooked egg on top for extra indulgence!
Ingredients:
  • 1 onion, diced
  • 2 cloves garlic, finely chopped
  • 2 rashers bacon, finally diced
  • 44.40 gm Brand Tomato Paste
  • 1 x 400g can tomatoes, diced
  • 62.50 ml balsamic vinegar
  • Cannellini beans, drained, rinsed
  • Thick sliced toast, to serve
  • 4 poached eggs, to serve
Instructions:
  • Preheat oven to 180C (160C fan). Warm oil in a large oven-safe casserole dish over medium heat. Sauté onion and garlic until translucent.
  • Cook the bacon until crisp, then incorporate the beans, tomato paste, tomatoes, sugar, and vinegar. Stir well to combine and bake in the oven for 1 hour and 45 minutes.
  • Stir in beans and bake for an additional 15 minutes.
  • Top the toast with a perfectly poached egg before serving.
