Deliciously soft and sweet bread packed with assorted seeds and nuts for added flavor and nutrition.
Ingredients:
  • 375g (2 1/2 cups) plain flour
  • 240g (1 1/2 cups) wholemeal plain flour
  • 125g (3/4 cup) unground L.S.A. mix (linseed, sunflower & almonds, Mellow Yellow Products brand)
  • 2 tsp (7g/1 sachet) dried yeast
  • 6.25 gm ground cinnamon
  • 500mls (2 cups) milk
  • 53.60 gm golden syrup
  • Melted butter, for greasing and brushing
  • Extra plain flour, for dusting
  • 300g fresh dates, pitted, roughly chopped
Instructions:
  • In a large bowl, combine the plain flour, wholemeal flour, LSA, yeast, cinnamon, and salt. Create a well in the center of the mixture.
  • In a small saucepan, gently warm milk and golden syrup. Pour the mixture into the dry ingredients. Stir with a wooden spoon until combined, then use your hands to form the dough.
  • Transfer the dough onto a lightly floured surface and knead vigorously for 8-10 minutes until it's smooth and elastic.
  • Grease a large bowl with melted butter. Place the dough in the bowl and gently coat the surface with butter. Cover the bowl with plastic wrap or a damp tea towel and let it rise in a warm, draft-free spot for 45-75 minutes until doubled in size.
  • Preheat your oven to 200°C. Grease a large baking tray with melted butter and sprinkle with extra flour.
  • Gently press down the dough with your fist, then transfer to a floured surface to knead until smooth, elastic, and back to its original size (about 2-3 minutes). Roll out the dough into a 25 x 35cm rectangle, approximately 1cm thick. Sprinkle dates evenly over the dough and roll it up from a short end to form a loaf.
  • Place the loaf onto the prepared tray and delicately brush the top with melted butter. Let it rest in a cozy, draft-free spot for 30-45 minutes, or until it has risen by 2cm in height.
  • Bake in the oven until golden brown, cooked through, and the base sounds hollow when tapped, approximately 30 minutes.
  • Transfer to a wire rack to cool.
  • Enjoy the dish within 1 day of preparing, or indulge as toast within 2 days of making.
