Quick and easy breakfast pot pie ready in just 15 minutes, ideal for a delicious brinner meal.
Ingredients:
  • 1 (7 ounce) package Jones Dairy Farm All Natural Golden Brown® Mild Sausage Links
  • 1 (14.1 ounce) package double-crust pie pastry, thawed
  • 6 large eggs, divided
  • 1 (10 ounce) package frozen mixed vegetables, thawed
  • 1 cup shredded Cheddar and Jack cheese
Instructions:
  • Place the sausage links on a microwave-safe plate lined with a paper towel and microwave on 50% power for 1 to 1 1/2 minutes.
  • Preheat the oven to 400°F. Gently place one pie pastry into a 9-inch pie plate, leaving the second pastry aside. Whisk an egg in a small bowl to make an egg wash.
  • In a bowl, whisk the 5 remaining eggs. Chop the sausage into small pieces and mix with the eggs, the mixed vegetables, cheese, salt, and pepper. Stir until thoroughly combined. Pour the mixture into the bottom pastry, then cover with the remaining pastry, sealing the edges by crimping them. Cut 3 slits in the top pastry and brush with egg wash.
  • Bake in the preheated oven for 35-37 minutes or until the internal temperature reaches 165 degrees F (74 degrees C. If necessary, cover the pie with foil to prevent the top crust from getting too brown. Allow it to rest for 10 minutes before slicing and serving.
