Indulge in fluffy pancakes filled with strawberry-lime cream for a delicious breakfast treat.
Ingredients:
  • 3 cups sliced strawberries (about 1 1/2 pints)
  • 1/2 cup sugar
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups milk
  • 2 tablespoons butter or margarine, melted
  • 1 teaspoon finely shredded lime peel
  • 2 tablespoons lime juice
  • 2 eggs
  • 2/3 cup whipping cream
  • 1 package (8 oz) cream cheese, softened
  • 1 tablespoon finely shredded lime peel
Instructions:
  • Combine fresh strawberries with a generous amount of sugar in a bowl to enhance their natural sweetness and allow them to macerate at room temperature. In another bowl, combine flour, sugar, baking powder, and salt. Mix in milk, melted butter, lime zest, lime juice, and eggs using a hand beater until you achieve a smooth batter.
  • Grease a 6- to 8-inch skillet lightly with butter and heat over medium heat until bubbly. Pour batter by slightly less than 1/4 cupfuls into skillet, rotating immediately until a thin layer covers the bottom. Cook until light golden brown, then run a wide spatula around the edge to loosen. Flip and cook the other side until light brown. Repeat with the remaining batter, greasing the skillet as necessary. Stack the wraps with waxed paper between each and let them cool completely.
  • In a chilled small bowl, whip the cream until stiff using an electric mixer. In a medium bowl, beat the cream cheese until fluffy, then mix in 1/2 cup of sugar and 1 tablespoon of lime peel. Carefully fold in the whipped cream.
  • Place a generous amount of the filling down the center of each wrap before folding the sides over. Serve by placing 2 wraps on each of the 6 plates and spooning strawberries over the top.
