Try these elegant Brie puff pastry bites with zesty lemon curd and juicy blueberries for a quick and impressive appetizer.
Ingredients:
  • 1 sheet frozen puff pastry, thawed
  • 0.5 (8 ounce) round Brie cheese, chilled
  • 0.33333334326744 cup lemon curd
  • 24 fresh blueberries
  • confectioners' sugar for dusting
  • 24 small fresh mint leaves for garnish (optional)
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and coat a mini muffin tin with cooking spray.
  • Lay out the thawed puff pastry on a floured surface. Roll it into a large rectangle, then slice it into 24 equal pieces. Gently place each piece into a muffin cup, and poke the bottom with a fork a few times.
  • Dice the Brie cheese into 24 small cubes, placing one cube into each muffin cup before topping each with approximately 1/2 teaspoon of lemon curd.
  • Bake the muffin tin in the preheated oven until the pastry puffs up and the corners become golden brown, about 12 to 14 minutes.
  • Take out of the oven and allow to cool in the pan for approximately 5 minutes. Transfer the bites to a serving plate, place a blueberry on top of each, sprinkle with confectioners' sugar, and optionally decorate with a small mint leaf.
  • Savor while still warm or at room temperature.
