Tangy cranberries complement creamy Brie cheese in buttery puff pastry.
Ingredients:
  • 1 cup fresh cranberries
  • 6 tablespoons packed brown sugar
  • 1 tablespoon orange juice
  • 1/2 teaspoon grated orange peel
  • 1 tablespoon butter or margarine
  • 1/3 cup sliced almonds
  • 1 sheet frozen puff pastry (from 17.3-oz package), thawed
  • 1 round (14 to 15 oz) Brie cheese
  • 1 egg, beaten
  • Assorted crackers or sliced fresh fruit
Instructions:
  • Combine cranberries, brown sugar, and orange juice in a 1-quart saucepan. Bring to a boil, stirring often, then lower the heat and simmer without a lid for 15 to 20 minutes until the mixture thickens and the cranberries soften. Add orange peel and take it off the heat.
  • Melt butter in an 8-inch skillet over medium heat. Cook almonds in the butter, stirring often, until beautifully golden brown; then remove from heat.
  • Preheat oven to 400°F. Grease a cookie sheet. Roll out pastry on a lightly floured surface into a 16x9-inch rectangle. Use a cutter to make one 8 1/2-inch circle and one 7-inch circle from the pastry.
  • Start by centering the cheese round on a large circle of pastry. Spoon cranberry sauce and almonds over the cheese. Gently bring the pastry up and press it around the sides of the cheese. Brush the top edge of the pastry with egg wash. Place another 7-inch circle on top, pressing along the edges to seal. Brush the top and sides of the pastry with more egg wash. Use the remaining pastry to create decorations and arrange them on top, then brush with egg wash. Finally, transfer the assembled pastry onto a cookie sheet.
  • Bake for 20-25 minutes until beautifully golden brown. Let cool on a wire rack for 1 hour before enjoying with crackers.
