Brie with caramelised pears

Indulge in caramel pear topped cheesy toasts for a decadent Sunday lunch appetizer.
Ingredients:
  • 12 x 2cm-thick slices crusty white bread
  • 36.40 gm olive oil
  • 5 small ripe beurre bosc pears, halved, core removed
  • 30g butter
  • 16.00 gm brown sugar
  • 40.00 ml white balsamic vinegar
  • 200g brie, thinly sliced
  • 30g baby rocket leaves
Instructions:
  • Preheat your oven to 180°C. Arrange bread slices in a single layer on a large baking tray and generously brush with oil. Bake for 10 minutes or until beautifully golden, remembering to turn them once halfway through.
  • Cut each pear half into 6 wedges with a small sharp knife. In a large frying pan over medium heat, melt the butter until foaming. Add the pear and sugar, then cook for 5 minutes, stirring occasionally, until pear is caramelized.
  • Pour the vinegar into the pan and cook while stirring for 2 minutes.
  • Place slices of brie on top of the toasts and bake in the oven until the brie is just melted, about 4 minutes. Divide the toasts among serving plates and top with caramelized pear. Serve with rocket on the side.
