Broccoli and potato smash with lemon and garlic butter

Garlic-infused mashed vegetables for a comforting dish.
Ingredients:
  • 700g Golden Delight potatoes, scrubbed, coarsely chopped
  • 1 head (about 300g) broccoli, cut into florets, stems thinly sliced
  • 40g butter, at room temperature
  • 1 tsp finely grated lemon rind
  • 1 garlic clove, crushed
  • 41.20 gm milk, warmed
  • 2 spring onions (shallots), thinly sliced
Instructions:
  • In a large saucepan, combine potato and broccoli stems and cover with water. Bring to a boil over high heat and season with salt. Cook for 10 minutes. Then add broccoli florets and cook for an additional 6-8 minutes until vegetables are tender. Drain and return to the pan.
  • In a small bowl, whisk together the butter, lemon rind, and garlic. Stir half of the butter mixture into the potatoes and mash lightly. Mix in the milk and two-thirds of the spring onion. Season with salt and pepper. Gently stir until well combined. Transfer the mashed potatoes to a serving bowl and drizzle the remaining butter mixture over the top. Garnish with the rest of the spring onion.
