Budget-friendly Japanese-inspired udon noodles mixed with broccoli and bacon for a delicious twist.
Ingredients:
  • 0.5 pound bacon, sliced
  • 1 large onion, sliced
  • 2 (7 ounce) packages fresh udon noodles
  • 1 head broccoli, cut into florets
  • 4 cups napa cabbage, sliced
  • 2 tablespoons sesame seeds, or to taste
  • 2 teaspoons ground black pepper
Instructions:
  • In a large covered skillet over medium-high heat, sauté the bacon and onion until the onions are translucent and the bacon is still soft, approximately 5 minutes.
  • Quarter each package of udon noodles and add them to the skillet. Cook and stir until the noodles soak up the bacon grease and separate, approximately 5 minutes.
  • Combine the broccoli and napa cabbage in the skillet, then generously sprinkle sesame seeds and black pepper over them. Cover and cook on medium heat, stirring occasionally with a wooden spatula, until tender, which usually takes 5 to 7 minutes.
