Stir-fry udon noodles with broccoli, peppers, and zucchini in spicy chili-garlic sauce for a delicious Japanese-inspired meal.
Ingredients:
  • 1 (10 ounce) package fresh udon noodles
  • 0.5 teaspoon sesame oil, divided, or to taste
  • 2 cups chopped broccoli
  • 0.5 green bell pepper, cut into matchsticks
  • 2 small carrots, cut into matchsticks, or to taste
  • 0.5 zucchini, thinly sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin (Japanese sweet wine)
  • 1 tablespoon chili-garlic sauce
  • 0.75 teaspoon minced ginger
Instructions:
  • 1. Boil a large pot of lightly salted water. Add udon noodles and cook until al dente, about 10 to 12 minutes. Drain and rinse with cold water, then toss with a touch of sesame oil.
  • In a large skillet over medium heat, warm the rest of the sesame oil. Stir-fry broccoli until vibrant green and crisp-tender for about 5 minutes. Toss in green bell pepper and carrots; cook until slightly softened for about 2 minutes. Introduce zucchini; cook until slightly softened for an additional 2 minutes. Incorporate soy sauce, mirin, chili-garlic sauce, and ginger; mix well. Add the noodles and stir-fry until they soak up some of the sauce, for 1 to 2 minutes more.
