Ingredients:
  • 2 200g pkts udon noodles (Trident brand)
  • 27.60 gm vegetable oil
  • 400g pork fillet, thinly diagonally sliced
  • 1 brown onion, halved, thinly sliced
  • 1 tsp finely grated fresh ginger
  • 170g broccoli, cut into florets
  • 2 carrots, peeled, cut into short, thin sticks
  • 20.00 gm water
  • 100g snow peas, ends trimmed, cut into long, thin strips
  • 60ml (1/4 cup) hoisin sauce
Instructions:
  • Boil noodles in a generously salted large saucepan for 1-2 minutes until they separate. Drain, return to pan, and cover to stay warm.
  • In a sizzling wok, heat 2 teaspoons of oil until shimmering. Quickly stir-fry half of the pork until beautifully browned, about 1-2 minutes. Set aside on a plate, lightly covering with foil to maintain warmth. Repeat the process with another 2 teaspoons of oil and the remaining pork.
  • In the same wok or pan, heat the rest of the oil over medium heat. Sauté the onion for 2-3 minutes until slightly softened. Stir in the garlic and ginger for 1 minute. Toss in the broccoli and carrots with water, cover, and cook for another minute. Finally, add the snow peas, cover, and cook for 30 seconds until tender-crisp.
  • Add the pork back to the pan along with the noodles and hoisin sauce. Mix well until everything is heated through and thoroughly combined. Serve right away.
