Quick Asian stir-fry with pork, frozen veggies, and udon noodles - perfect for busy nights.
Ingredients:
  • 1 (7 ounce) package udon noodles
  • 0.25 cup vegetable oil
  • 2 tablespoons cornstarch
  • 1 tablespoon minced garlic
  • 0.25 teaspoon ground ginger
  • 2 (10 ounce) packages frozen Asian vegetable medley
  • 5 tablespoons soy sauce
  • 2.5 tablespoons water
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon white sugar
  • 2 tablespoons sesame oil
  • 1 pound pork tenderloin, cut into strips
Instructions:
  • 1. Boil a large pot of lightly salted water. Add udon noodles and cook until tender yet firm to the bite, about 10 to 12 minutes. Drain and set aside.
  • As noodles cook, whisk together vegetable oil, cornstarch, garlic, and ginger in a large bowl until cornstarch dissolves. Add frozen vegetables and toss gently to coat.
  • Combine soy sauce, water, vinegar, and sugar in a small bowl and whisk until well blended.
  • In a wok over medium-high heat, sizzle sesame oil. Brown pork strips for 5 to 7 minutes. Toss in frozen vegetables for 2 minutes, stirring constantly. Mix in soy sauce, then add drained udon. Stir-fry until pork is cooked and veggies are tender, about 2 minutes.
