Easy weeknight broiled salmon marinated in sweet soy and onion glaze.
Ingredients:
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon olive oil
  • 1 large red onion, cut into 1/4-inch thick wedges
  • 1 pinch kosher salt and ground black pepper to taste
  • 4 (5 ounce) skinless salmon fillets
Instructions:
  • Position an oven rack 6 inches below the broiler and preheat the broiler.
  • Mix the brown sugar and soy sauce in a small bowl.
  • In a pan, heat oil over medium-high heat. Cook onion, salt, and pepper until soft, about 5 to 7 minutes. Mix with sugar mixture. Arrange salmon fillets on a rimmed baking sheet.
  • Bake salmon in the preheated oven for 10 minutes, then flip and generously drizzle with half of the sweet sugar glaze. Broil until salmon is fully cooked and flakes easily with a fork, about 5 to 10 minutes. Serve with the rest of the delightful sugar glaze on the side.
