A nostalgic bean chowder, beloved from childhood, reminiscent of chili. A hearty comfort food, traditionally paired with cinnamon rolls, inspired by a dietician/cook grandmother.
Ingredients:
  • 2.5 cups dried pinto beans
  • 3 quarts water
  • 1.5 teaspoons chili powder
  • 1.5 teaspoons salt
  • 1 pound ground beef
  • 0.5 medium onion, chopped
  • 1 teaspoon minced garlic
  • 1.6666666269302 cups tomato puree
  • 1 tablespoon chili powder
  • 1 tablespoon salt
  • 1 cup dry bread crumbs
Instructions:
  • In a large pot, simmer beans in water until almost tender, approximately 1 1/2 hours. Add 1 1/2 teaspoons of chili powder and 1 1/2 teaspoons of salt to season.
  • In a large skillet over medium-high heat, crumble the ground beef and add onion and garlic. Cook and stir until the onion is tender and the meat is browned. Drain off any excess grease, then mix in the tomato puree, 1 tablespoon of chili powder, 1 tablespoon of salt, and bread crumbs. Combine this mixture with the beans in the pot, adding more water if needed for your preferred consistency. Taste and adjust seasonings as desired before serving.
