Apple crisp bars feature a rich and nutty brown butter in both the crust and topping for a decadent flavor boost.
Ingredients:
  • 0.5 cup unsalted butter
  • 2 large Granny Smith apples - peeled, cored, and thinly sliced
  • 2 tablespoons firmly packed brown sugar
  • 2 tablespoons unsalted butter
  • 1 teaspoon lemon juice
  • 1.25 teaspoons ground cinnamon, divided
  • 2 teaspoons water
  • 1 teaspoon cornstarch
  • 1.5 cups rolled oats
  • 0.75 cup all-purpose flour
  • 0.5 cup firmly packed brown sugar
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt
Instructions:
  • In a medium, light-colored saucepan, melt 1/2 cup of butter over medium-low heat. Keep swirling until the butter turns golden brown and releases a nutty aroma, approximately 10 minutes. Transfer the browned butter into a large mixing bowl and set it aside.
  • In a saucepan, mix together apples, brown sugar, butter, lemon juice, cinnamon, and a pinch of salt. Cook over medium-low heat, stirring occasionally, until apples are soft, about 10 minutes.
  • Combine water and cornstarch in a small bowl. Transfer the mixture to the saucepan and stir well until it slightly thickens, about 1 to 2 minutes. Take the pan off the heat and allow it to cool for a bit.
  • Preheat your oven to 350°F (175°C) and line a 9x9-inch square baking pan with parchment paper, leaving an overhang on all sides.
  • Combine oats, flour, 1/2 cup brown sugar, 1 teaspoon cinnamon, vanilla, baking soda, nutmeg, and 1/4 teaspoon salt with the brown butter until thoroughly mixed. Reserve 1 cup of this mixture for topping.
  • Transfer the rest of the oat mixture into the pan and press it down firmly to create a smooth layer. Spread the apples and sauce over the crust evenly. Sprinkle the reserved oat mixture on top.
  • Bake in the preheated oven until the top turns golden brown and crisp, which should take around 30 to 35 minutes. Let it cool completely for about 30 minutes before slicing into 16 bars.
