Prepare ham 24 hours in advance by seasoning with brown sugar and spices. Top with pineapple and bake slowly for a tender and flavorful holiday ham.
Ingredients:
  • 15-pound bone-in ham
  • 2 cups brown sugar, packed
  • 1/2 teaspoon ground cloves
  • 5 (20 oz) cans of pineapple rings in 100% juice
  • To Serve:
  • Variety of high-quality mustard
Instructions:
  • Get your roasting pan ready by placing it on your counter and removing the roasting rack. Skip using it. Arrange 6 to 8 pineapple rings on the bottom of the roasting pan. A large casserole dish works too, as long as it fits your ham!
  • Coat the ham: Unwrap the ham and place it in a roasting pan. Mix brown sugar and ground cloves in a bowl. Massage the sugar mixture onto the ham, ensuring every surface is covered. Gently press the sugar into the meat; if any falls in the pan, scoop it up and continue. Finally, place the ham cut side down on top of pineapple rings.
  • Score the ham in a diamond pattern about 1/4-inch deep. If it's easier, transfer the ham to a cutting board for scoring, then place it back in the roasting pan with the cut side down on the pineapple rings. Pour the juice from 1 can of pineapple into the pan without pouring it over the ham to preserve the brown sugar coating.
  • Allow the ham to relax for 24 hours: Wrap the ham in aluminum foil, seal it in the roaster, and chill in the refrigerator for a minimum of 8 hours or overnight.
  • Place pineapple slices to cover the entire surface of the ham, securing them with toothpicks if needed, before spooning pan juices over the top.
  • Prepare the ham for baking by tightly sealing it with foil in the roasting pan. Bake it at 325°F for 15 to 18 minutes per pound of meat until fully cooked. (Approximately 4 1/2 hours for a 15-pound ham.)
  • Before slicing, allow the ham to rest, covered, for 15 minutes.
  • To serve, place the ham on a cutting board, set aside the pineapple slices for later, discard the toothpicks. Slice the ham to your preferred thickness and place the slices back into the juices in the roaster. Finally, transfer slices to a serving platter and serve with mustard and chutneys. Enjoy!
