Kid-friendly Brown Sugar-Glazed Carrots: Boosted with brown sugar, orange zest, and butter for an irresistible sweet and colorful side dish that will have everyone asking for seconds!
Ingredients:
  • 2 pounds carrots, cut into 1/4-inch slices (12 to 14 medium)
  • 1/2 teaspoon salt, if desired
  • 2/3 cup packed brown sugar
  • 1/4 cup butter
  • 1 teaspoon orange zest
Instructions:
  • Bring 1 inch of water to a boil in a 3-quart saucepan. Add carrots and, if desired, 1/2 teaspoon salt. Cover and simmer for 12 to 15 minutes until carrots are tender.
  • As the carrots simmer, gently warm brown sugar, butter, orange zest, and 1/2 teaspoon salt in a 10- or 12-inch skillet over medium heat. Stir continuously until the sugar dissolves, and the mixture becomes bubbly. Avoid overcooking to prevent a burned taste. Take the skillet off the heat.
  • Drain carrots and gently incorporate them into the caramelized brown sugar mixture. Simmer over low heat for about 5 minutes, stirring occasionally, until carrots are coated in a shiny glaze and heated through.
