Caramelized carrots with brown sugar, butter, and zesty orange.
Ingredients:
  • 1 1/2 lb carrots, peeled and cut into julienne strips, or 1 1/2 lb ready-to-eat baby-cut carrots
  • 1/3 cup packed brown sugar
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon grated orange peel
Instructions:
  • In a 2-quart saucepan, bring 1 inch of water to a boil. Carefully add the carrots and let them cook until they are crisp-tender, about 6 to 9 minutes. Drain and set aside.
  • Cook all the remaining ingredients in a 12-inch skillet over medium heat, stirring constantly, until they become bubbly.
  • Gently fold in the carrots and simmer on low heat for approximately 5 minutes, stirring occasionally, until the carrots are perfectly glazed and hot.
