Elevate everyday carrots with a wow-worthy flavor combo and clever cooking technique. These special carrots are anything but ordinary.
Ingredients:
  • 1 kg small mixed-colour carrots heirloom if you can get them
  • 50 g unsalted butter
  • 1 tablespoon dripping (optional)
  • 6 cloves garlic
  • 8 sprigs fresh thyme
  • 2 clementines
  • 2 tablespoons runny honey
  • 2 fresh bay leaves
Instructions:
  • 1. Prepare the carrots by trimming and washing them, leaving a bit of green tops for a beautiful presentation. 2. In a large frying pan over medium heat, melt the butter and dripping. Crush garlic cloves with your knife and add to the pan, turning after 1 minute. 3. Add thyme sprigs, clementine juice, honey, bay, and a splash of water to the pan, letting it sizzle. 4. Toss in the carrots, sprinkle with sea salt and black pepper, and coat them in the flavorful mixture by shaking the pan. 5. Cover the pan, lower the heat to medium-low, and cook for 10-15 minutes until the carrots are tender. 6. Uncover the pan, carefully reduce the liquid to create a clementine glaze, and let the carrots caramelize, turning frequently. 7. Serve immediately or set aside and reheat when ready to enjoy.
