Decadent chocolate brownies with glossy meringue-like tops and fudgy centers.
Ingredients:
  • 1 tablespoon shortening, or as needed
  • 8 (1 ounce) squares semisweet chocolate (such as Baker's®), chopped
  • 0.75 cup unsalted butter, cubed
  • 0.5 cup all-purpose flour
  • 0.5 cup unsweetened dark cocoa powder
  • 6 large eggs, at room temperature
  • 1 cup packed brown sugar
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking pan with shortening.
  • In a large, heavy saucepan, melt chocolate and butter together over low heat, stirring constantly until smooth, about 5 minutes. Remove from heat.
  • Combine flour, cocoa, and salt in a bowl and whisk until well blended.
  • In a large bowl, use an electric mixer on high speed to beat eggs until well blended. Gradually add white and brown sugars, beating until mixture triples in volume and turns very pale yellow, approximately 10 minutes. The mixture should form ribbons when lifting the beaters. Fold in the chocolate-butter mixture and vanilla extract, followed by the flour mixture. Pour the batter into the prepared pan.
  • Bake in the preheated oven for 28 to 32 minutes or until a toothpick inserted into the center comes out almost clean. Allow to cool before cutting into 16 brownies.
