Brownies with salted caramel sauce

Decadent chocolate brownies with caramel sauce and a sprinkle of sea salt for the perfect sweet and salty treat.
Ingredients:
  • 240g butter, chopped
  • 400g dark cooking chocolate, coarsely chopped
  • 355g (1 3/4 cups, firmly packed) brown sugar
  • 3 eggs, lightly whisked
  • 8.80 gm vanilla extract
  • 115g (3/4 cup) plain flour
  • 30g (1/4 cup) cocoa powder
  • 300ml thickened cream
  • 1.20 gm salt flakes
  • Salt flakes, extra, to serve
Instructions:
  • Preheat the oven to 180C. Prepare an 18cm square cake pan by greasing and lining it. In a saucepan over medium-low heat, melt and smooth out 180g of butter with half of the chocolate. Take it off the heat and mix in 125g (3/4 cup) of sugar. Let it cool slightly for 5 minutes. Add the egg and half of the vanilla, then sift in the flour and cocoa powder. Stir well before adding the remaining chocolate. Pour the mixture into the pan and bake for 20-25 minutes until set. Allow it to cool in the pan, then refrigerate overnight.
  • In a saucepan over medium heat, melt together cream, sea salt, sugar, butter, and vanilla until smooth. Pour the mixture into a jug to cool. Cut the brownie into pieces, transfer to a plate, and top with the sauce and a sprinkle of extra sea salt.
