Brussels sprouts tossed with almonds, Manchego cheese and citrus dressing - a delicious veggie dish, perfect as a meal or side.
Ingredients:
  • 2 pounds Brussels sprouts, cut in half
  • 3 tablespoons olive oil
  • salt and ground black pepper to taste
  • 0.33333334326744 cup sliced almonds
  • 2 ounces Manchego cheese, shredded
  • 3 tablespoons lemon juice
  • 1 lemon, zested
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • Coat Brussels sprouts in olive oil and place them on a baking sheet, cut-side down. Sprinkle with salt and pepper.
  • Place the Brussels sprouts in the preheated oven until they begin to soften, approximately 10 minutes. Take them out of the oven, sprinkle with sliced almonds, and then return them to the oven. Keep cooking until the sprouts become crispy and brown on the edges and the almonds are toasted, which should take an additional 15 to 20 minutes.
  • Transfer the cooked Brussels sprouts to a medium serving bowl. Mix in the Manchego cheese, lemon juice, and lemon zest until the sprouts are well coated. Season with salt and pepper.
