Brussels sprouts sautéed with onions, butter, and toasted almonds for maximum flavor!
Ingredients:
  • 1 pound fresh Brussels sprouts, outer leaves removed
  • 4 to 6 tablespoons butter
  • 1/2 onion, chopped
  • Salt and pepper
  • 1 teaspoon lemon juice or 1 tablespoon Meyer lemon juice, fresh squeezed
  • 1/4 cup toasted slivered almonds
Instructions:
  • Blanch the brussels sprouts: Boil 2 quarts of salted water (1 Tbsp of salt), then add the brussels sprouts and blanch for 3 minutes until slightly tender. Alternatively, steam them. They should be nearly cooked (check by splitting one in half). Transfer the sprouts to a bowl of ice water for a minute to retain their vibrant green color. Drain and cut the sprouts in half.
  • In a large sauté pan over medium heat, melt 2-3 Tbsp of butter. Sauté chopped onions until translucent, about 4-5 minutes. Add another 2-3 Tbsp of butter and brussels sprouts halves. Increase heat to medium-high and cook for a few more minutes. Season with salt and pepper while cooking. Be careful not to overcook to avoid bitterness.
  • After removing the pan from the heat, blend in the bright lemon juice and half of the crunchy toasted almonds. Season with salt and pepper to your liking. Transfer to a serving dish and top with the remaining toasted almonds for a beautiful finish. Enjoy Heidi's delectable Golden-crusted Brussels sprouts!
