Crispy Brussels sprouts cooked with bacon, onions, roasted chestnuts, thyme, and a hint of lemon.
Ingredients:
  • 1 pound Brussels sprouts
  • 1/3 pound thick-sliced bacon or slab bacon, cut into 1/4-inch pieces or batons
  • 1 red onion, chopped
  • 20-25 canned roasted chestnuts, quartered or roughly chopped
  • 1/4 cup chicken stock
  • Salt and pepper to taste
  • Lemon wedges to serve
Instructions:
  • Prepare the Brussels sprouts by halving them and thinly slicing from top to stem, discarding the tough tip.
  • Prepare the bacon: Slice the bacon into 1/4-inch pieces and cook in a large sauté pan over medium heat until golden brown. Remove the crispy bacon using a slotted spoon and set it aside.
  • In a sizzling skillet with flavorful bacon fat, sauté the red onions until golden brown. Crumble and return the crispy bacon to the skillet for added deliciousness.
  • Add chestnuts and Brussels sprouts to the sauté pan with bacon and onions, pour in the chicken stock, and toss to combine. Season with 1 teaspoon of salt, cook over high heat for 3-4 minutes, then add pepper to taste. Serve hot with lemon wedges and squeeze fresh lemon juice over the sprouts before eating.
