Baked Buffalo Cauliflower with creamy blue cheese dip - a vegetarian twist on a classic bar snack.
Ingredients:
  • cooking spray
  • 0.33333334326744 cup Buffalo wing sauce (such as Frank's®)
  • 3 tablespoons mayonnaise
  • 1 large egg
  • 6 cups cauliflower florets
  • 1.5 cups garlic croutons
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup blue cheese salad dressing
  • 0.25 cup sour cream
  • 1 pinch ground black pepper
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and generously coat a baking sheet with cooking spray.
  • In a large bowl, combine wing sauce, mayonnaise, and egg, whisking until smooth. Add cauliflower florets to the mixture, ensuring they are evenly coated. Spread the coated cauliflower out on a baking sheet.
  • Turn croutons into fine crumbs in a food processor, then blend in Parmesan cheese. Sprinkle over cauliflower.
  • Roast the cauliflower in the hot oven until it turns golden brown and tender, for approximately 15 minutes. Allow it to rest for 5 minutes before transferring from the baking sheet.
  • Combine blue cheese dressing, sour cream, and black pepper to create a delicious dip. Serve the dip with cauliflower for a tasty appetizer.
