Buffalo chicken tenders with gooey melted mozzarella - a family favorite skillet dinner.
Ingredients:
  • 3 pounds chicken breast tenderloins
  • 0.75 teaspoon salt
  • 0.75 teaspoon ground black pepper
  • 6 large eggs
  • 1.5 cups panko bread crumbs
  • 9 tablespoons canola oil
  • 0.75 cup Buffalo wing sauce (such as Frank's®), or to taste
  • 1.5 cups shredded mozzarella cheese
Instructions:
  • Season the chicken with a pinch of salt and freshly cracked black pepper, then let it rest.
  • Whisk eggs in a shallow bowl until silky. Set panko in another shallow bowl.
  • Coat chicken in eggs, then press into panko breadcrumbs.
  • In a large skillet over medium heat, sizzle the chicken until it boasts a crisp golden crust and no pink center remains, about 4 minutes on each side. Let them rest on a paper towel-lined plate to absorb any excess oil. Repeat with the remaining chicken in two separate batches.
  • Place the pan-fried chicken back in the skillet. Drizzle with wing sauce and layer with cheese. Lower the heat, cover, and cook until the cheese is melted, approximately 5 minutes.
