Spicy buffalo tempeh tenders: a vegetarian twist on the classic tailgating favorite!
Ingredients:
  • 1 cup matzo meal
  • 1 (8 ounce) package tempeh, sliced into 1/4-inch thick slices
  • vegetable oil
  • 0.5 cup Buffalo wing sauce, or to taste
  • 0.5 cup blue cheese salad dressing, or to taste
Instructions:
  • In a bowl, vigorously whisk the egg for 30 seconds to 1 minute until frothy. Transfer the matzo meal into a separate bowl.
  • Coat tempeh slices in beaten egg, then generously cover with matzo meal for a crispy finish.
  • Heat oil in a skillet until it reaches 350 degrees F (175 degrees C). Fry breaded tempeh until it turns golden brown, which should take 3 to 5 minutes. Transfer the tempeh to a plate lined with paper towels to cool down for a bit.
  • Place the tempeh in a bowl and generously coat it with Buffalo wing sauce. Cover the bowl and shake well until the tempeh is evenly coated. Serve with a side of creamy blue cheese dressing.
