Spicy BBQ Buffalo wings with a kick, perfect for finger-licking indulgence.
Ingredients:
  • 8 organic chicken wings
  • 75g unsalted butter
  • 20.80 gm Tabasco sauce
  • 6.10 gm Worcestershire sauce
  • 1 onion, grated
  • 1 tsp ground coriander
  • 2.50 gm ground cumin
  • 1 tsp ground allspice
  • 1/2 tsp cayenne pepper
  • 20.00 ml malt vinegar or lemon juice
  • 80ml tomato sauce
  • 23.40 gm Dijon mustard
  • 24.40 gm Worcestershire sauce
  • 2 spring onions, finely chopped (optional)
Instructions:
  • Cut chicken wings in half between the joints, removing the tips. Melt butter in a frypan over medium heat, then stir in Tabasco and Worcestershire sauces along with 1/2 teaspoon each of salt and pepper until well combined.
  • Mix the wings with the sauce in a bowl, cover, and let marinate in the fridge for a few hours or overnight.
  • Preheat the oven to 220°C and prepare a baking tray with baking paper.
  • Place the wings on the baking tray and bake until golden brown and fully cooked, around 20 minutes.
  • To make the flavorful barbecue sauce, warm olive oil in a saucepan over gentle heat. Sauté onion, garlic, coriander, cumin, allspice, and cayenne for 5 minutes until onion is tender. Stir in brown sugar and malt vinegar or lemon juice until well mixed.
  • Pour in the tomato sauce, Dijon mustard, Worcestershire sauce, and 1 cup (250ml) water. Season generously with sea salt and freshly ground black pepper. Increase heat to medium-high and bring to a boil. Then, lower the heat to medium-low and simmer for 15 minutes, stirring occasionally, until the sauce thickens.
  • Let it cool briefly, then blend until smooth. Once completely cooled, garnish with spring onions before serving, if desired.
  • Enjoy the wings alongside a delicious bowl of homemade, tangy barbecue sauce for dipping.
