Wholesome whole grain muffins bursting with Canadian bumbleberries - a perfect morning indulgence.
Ingredients:
  • 1 cup milk
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 0.5 cup rolled oats
  • 0.5 cup ground flax seeds
  • 0.5 cup white sugar
  • 2 teaspoons baking powder
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 2 eggs
  • 1 cup mixed frozen berries
Instructions:
  • Preheat your oven to 325°F (165°C) and lightly grease a muffin tin.
  • Combine the milk and lemon juice in a bowl, allowing it to sour for approximately 5 minutes.
  • In a large bowl, mix together flour, whole wheat flour, oats, flax, sugar, baking powder, cinnamon, baking soda, nutmeg, and salt.
  • In a small bowl, whisk together soured milk, eggs, and vanilla extract. Combine with the flour mixture until just moistened. Gently fold in the berries before spooning the batter into the prepared pan.
  • Bake in the preheated oven for 20 to 25 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the tin for 5 minutes, then transfer to a cooling rack.
