Make ahead freezer cookies for ultimate convenience - prepare, freeze, and bake fresh when needed.
Ingredients:
  • 2 cups butter, softened
  • 1.5 cups white sugar
  • 4 egg yolks
  • 1.5 teaspoons vanilla extract
  • 4.5 cups all-purpose flour
Instructions:
  • In a large bowl, beat together butter and sugar until creamy. Gradually mix in the yolks one at a time, followed by the vanilla. Add flour and salt; mix until combined. Shape dough into 2-inch diameter logs, wrap in waxed paper, and chill until firm in the fridge or freezer.
  • Preheat the oven to a cozy 350 degrees F (175 degrees C). Unwrap the rolls and if you're feeling fancy, roll them in nuts or sprinkles before slicing them into 3/8-inch wide slices. Arrange the slices 2 inches apart on ungreased cookie sheets.
  • Place in the preheated oven for 8 to 10 minutes, ensuring not to brown. Transfer to a wire rack to cool thoroughly.
