Indulge in the rich, decadent taste of pecan pie with these simple and delicious bar cookies.
Ingredients:
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 3 tablespoons granulated sugar
  • 3/4 cup butter or margarine, softened
  • 3 eggs, separated
  • 2 1/2 cups packed light brown sugar
  • 1 teaspoon vanilla
  • 1 cup chopped pecans
  • 3/4 cup flaked coconut
  • 2 tablespoons powdered sugar
Instructions:
  • Preheat oven to 375°F and generously coat a 13x9-inch pan with butter.
  • Combine flour, granulated sugar, and butter in a medium bowl until the mixture resembles coarse crumbs. Press the mixture into the bottom of the pan and bake for 12 to 14 minutes, until light brown.
  • In a large bowl, use an electric mixer to beat together egg yolks, brown sugar, vanilla, and salt until smooth. Stir in pecans and coconut. In a separate small bowl, use the electric mixer to beat egg whites until foamy, then gently fold them into the egg yolk mixture.
  • Take out the partially baked crust from the oven. Evenly spread the filling over the crust. Lower the oven temperature to 350°F.
  • Bake for 25 to 30 minutes until deep golden brown and center is set. Sprinkle powdered sugar over bars, then cool on a rack and cut into 6 by 6 rows.
