Buttermilk Dough for Fried Fruit Pies

Whisk buttermilk, lard, and salt for fruity fried pie dough.
Ingredients:
  • 3 cups all-purpose flour
  • 0.5 cup lard
  • 3 tablespoons white sugar
  • 0.5 teaspoon kosher salt
  • 1 cup buttermilk, at room temperature
Instructions:
  • In a food processor, pulse together flour, lard, sugar, and salt until they resemble pea-sized pieces covered in flour, with about 15 quick pulses. Then add the buttermilk all at once and process until the dough is almost fully combined.
  • Sprinkle plenty of flour on the work surface and transfer the dough onto it. Gently coat the dough by flipping it over. Fold the dough a few times, then shape it into a soft 4x6-inch block.
  • Create an X shape by crisscrossing 2 long pieces of plastic wrap and sprinkle lightly with flour. Put the dough in the middle and wrap tightly. Use a rolling pin to smooth the wrapped surface; then flip and repeat. Refrigerate for at least 4 hours or, better yet, overnight. Alternatively, place it in a zip-top plastic freezer bag and freeze for up to 3 months. Thaw overnight in the fridge before using.
