Moist drop scones with buttermilk, applesauce, cranberries, and almonds - a delightful breakfast treat!
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.5 cups whole wheat flour
  • 1.25 cups rolled oats
  • 2 tablespoons white sugar
  • 4 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon baking soda
  • 1.5 cups low-fat buttermilk
  • 0.66666668653488 cup unsweetened applesauce
  • 1 egg
  • 0.5 cup dried cranberries
  • 0.25 cup sliced almonds
  • 0.25 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 400°F (200°C) and grease a baking sheet.
  • Combine all-purpose flour, whole wheat flour, oats, sugar, baking powder, salt, and baking soda in a mixing bowl and stir until evenly mixed.
  • Combine the buttermilk, applesauce, and egg in a separate bowl. Mix into the flour mixture until dough is sticky, then gently incorporate the cranberries and almonds.
  • Mix sugar and cinnamon together in a bowl to make the topping. Spoon batter onto the prepared baking sheet in 1/4 cup-size dollops. Sprinkle with the cinnamon-sugar mixture.
  • Bake in the oven until the tops are beautifully golden brown, around 15 to 18 minutes.
