Enjoy creating delicious homemade doughnuts.
Ingredients:
  • 50g butter, melted, cooled
  • 140g (2/3 cup) caster sugar
  • 2 egg yolks
  • 375g (2 1/2 cups) plain flour
  • 6.00 gm baking powder
  • 1.25 gm bicarbonate of soda
  • 0.63 gm ground nutmeg
  • 375ml (1 1/2 cups) buttermilk
  • 215g (1 cup) caster sugar, extra
  • 5.00 gm ground cinnamon
  • Canola oil, to deep-fry
Instructions:
  • In a large bowl, mix together butter, sugar, and egg yolks. In a separate bowl, sift together flour, baking powder, bicarbonate of soda, and nutmeg. Gradually add half of the flour mixture and half of the buttermilk to the egg mixture. Stir until combined. Add the remaining flour mixture and buttermilk, and stir until combined. Let the mixture rest for 10 minutes before using.
  • Mix the additional sugar and cinnamon on a plate. Pour oil into a large saucepan, filling it to a 5cm depth. Heat over medium-high heat to 170°C (to test readiness, bread cube should turn golden brown in 20 seconds).
  • Gently drop 4 dessertspoonfuls of dough into the hot oil and fry for 5-7 minutes until golden brown, turning occasionally. Remove the doughnuts with a slotted spoon and place them on paper towels to drain for 2-3 minutes. Repeat with the remaining dough in 4 batches, making sure to reheat the oil each time.
  • Coat the warm doughnuts evenly in the cinnamon sugar and arrange them on a serving tray. Enjoy them warm or at room temperature, and feel free to sprinkle any leftover cinnamon sugar on top.
