Tangy buttermilk hush puppies pair perfectly with coleslaw and fried catfish for a classic Southern feast.
Ingredients:
  • 1 quart vegetable oil for frying, or as needed
  • 1 cup buttermilk
  • 0.25 cup vegetable oil
  • 2 eggs, room temperature
  • 0.25 cup white sugar
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup minced onion
  • 4 green onions, minced
Instructions:
  • Heat 1 quart of vegetable oil in a deep-fryer or large saucepan until it reaches 365 degrees F (185 degrees C).
  • Preheat the oven to a toasty 200 degrees F (95 degrees C).
  • In a bowl, combine buttermilk, 1/4 cup vegetable oil, and eggs, and whisk until smooth.
  • In a separate bowl, mix together cornmeal, flour, sugar, baking soda, and salt. Gently fold in buttermilk mixture, onion, and green onions until just combined.
  • Spoon batter into hot oil, frying until hush puppies turn golden brown (6 to 10 minutes), turning for even cooking. Drain on brown paper bags and repeat with any remaining batter.
  • Place the hush puppies on a baking sheet and let them stay warm in the preheated oven until serving time.
