Indulge guilt-free on Pancake Tuesday with these fluffy, low-fat buttermilk pancakes.
Ingredients:
  • 625.00 gm water
  • 268.75 gm caster sugar
  • 2 x 100g packets Dried Strawberries
  • 0.63 gm bicarbonate of soda
  • 150.00 gm self-raising flour, sifted
  • 325.00 gm buttermilk
  • low-fat yoghurt, to serve
Instructions:
  • In a saucepan, combine water, 1 cup of sugar, and strawberries. Heat gently until sugar dissolves. Turn up the heat, bring to a boil, then reduce heat to low and simmer for 50 minutes until strawberries are tender. Set aside.
  • In a bowl, mix together the remaining sugar, bicarbonate of soda, and flour. In a separate bowl, whisk buttermilk and egg together. Combine the buttermilk mixture with the flour mixture and stir until well mixed.
  • Preheat a frying pan over medium heat and lightly coat with oil. Pour 2 tablespoons of batter into the pan and cook for about 2 minutes until bubbles appear on the surface. Flip the pancake and cook for another 1 to 2 minutes until done. Repeat with the rest of the batter. Serve with fresh strawberries and yogurt.
