Elevate mashed potatoes with zesty mustard seeds for a creamy, flavorful twist.
Ingredients:
  • 1.5kg Golden Delight or brushed potatoes, peeled, cut into 5cm pieces
  • 36.40 gm light olive oil
  • 20.00 ml mustard seeds
  • 125g butter
  • 250ml (1 cup) milk
  • 1 bunch parsley, chopped
Instructions:
  • Place the potato in a large saucepan filled with cold water and bring to a boil over high heat. Reduce heat to medium-low and simmer for 25 minutes until tender. Drain the potatoes and transfer to a large bowl. Let them sit for 3 minutes to allow excess moisture to evaporate.
  • Heat a saucepan over medium heat. Add oil and mustard seeds and cook for 1 minute until the seeds start to pop. Stir in butter and milk until the butter melts.
  • Combine the potato in the pan and mash until smooth. Use an electric beater to whip the potato mixture for 2 minutes until it's airy. Fold in the parsley and season with salt and pepper to taste.
