Cabbage-Pineapple-Ginger Salad

Create a zesty cabbage slaw with sweet pineapple, ginger, raisins, green onions, and sesame seeds - ready in just 40 minutes!
Ingredients:
  • 1 large (3 1/2 lb) cabbage, cut into 1-inch cubes
  • 1/2 cup sesame oil
  • 1/2 cup thinly sliced gingerroot
  • 6 large cloves garlic, peeled and thinly sliced
  • 2 teaspoons sesame seed
  • 3 cups chopped fresh pineapple
  • 1/3 cup chopped Fresh green onions
  • 1/2 cup golden raisins
  • 2 tablespoons rice vinegar
  • Salt to taste
Instructions:
  • Place the chopped cabbage in a large bowl and set it aside.
  • Heat sesame oil in a 1-quart saucepan over medium heat. Fry gingerroot until golden brown, then transfer to a small bowl. Add garlic to the hot sesame oil. Once garlic starts turning golden, add sesame seeds and cook until both are golden brown.
  • Drizzle sizzling sesame oil over cabbage with garlic and sesame seeds. Toss in crispy fried ginger and mix gently. Add in pineapple, scallions, raisins, and rice vinegar. Season with a sprinkle of salt. Serve the vibrant salad at room temperature.
