Decadent chocolate energy boost snack.
Ingredients:
  • 500.00 ml mixed toasted nuts (eg almonds, walnuts, Brazil and hazelnuts)
  • 100.00 gm rolled oats
  • 187.50 ml raisins
  • 125.00 ml dried apricots, chopped
  • 85.00 gm sultanas
  • 62.50 ml pumpkin seeds (pepitas)
  • 32.50 gm Cocoa
  • 89.38 gm honey
  • 2.50 gm cinnamon
  • 85.00 gm desiccated coconut
  • 10.00 gm Cocoa, extra
Instructions:
  • Combine nuts and oats in a food processor to create a crumb texture. Add dried fruits and pulse to chop. Then, mix in pumpkin seeds, cocoa, honey, and cinnamon until well combined.
  • Shape mixture into small balls. Mix coconut and extra cocoa together. Coat each ball with the coconut mixture. Place on a tray and refrigerate until firm. Keep in an airtight container until ready to enjoy.
