Quick and delicious homemade pizza ready faster than delivery!
Ingredients:
  • 6 (about 180g each) chicken thigh fillets, cut into 2cm pieces
  • 20.00 gm Cajun or Creole seasoning
  • 2 x 350g pkts original pizza crust
  • 300g (3 cups) coarsely grated mozzarella
  • 2 just-ripe mangoes, peeled, finely chopped
  • 2 ripe avocados, halved, stones removed, peeled, finely chopped
  • 1 red onion, halved, finely chopped
  • 62.50 ml finely chopped fresh coriander
  • 21.00 gm fresh lime juice
  • 1 fresh long red chilli, deseeded, finely chopped
  • Baby rocket leaves, to serve
Instructions:
  • Preheat the oven to 240°C. Mix the chicken with Cajun seasoning in a large bowl. In a large non-stick frying pan over high heat, warm the oil. Cook one-third of the chicken, stirring occasionally, until browned all over for about 3 minutes. Transfer to a heatproof bowl. Repeat in 2 more batches with the remaining chicken, ensuring to heat the pan between batches.
  • Lay out pizza bases on 2 baking trays. Evenly scatter mozzarella and chicken over them. Bake in oven for 15 minutes or until golden brown, switching trays halfway through cooking.
  • In a medium bowl, mix together the mango, avocado, onion, cilantro, lime juice, and chili for a flavorful combination.
  • Top the pizzas with fresh and vibrant mango salsa, peppery rocket leaves, and then cut into slices for a delightful presentation.
