Cajun Chicken Ragout

Succulent chicken and flavorful andouille sausage cooked in a hearty Cajun stew with bacon, bell peppers, onion, celery, garlic, and zesty spices.
Ingredients:
  • 6 slices bacon, cut into 1/4-inch pieces
  • 1 large onion, diced
  • 2 ribs celery, diced
  • 1 pinch salt
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 0.33333334326744 cup all-purpose flour
  • 1 teaspoon freshly ground black pepper
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon cayenne pepper, or to taste
  • 3 cups cold chicken broth, divided
  • 1 teaspoon Worcestershire sauce
  • 8 ounces andouille sausage, sliced
  • 2 tablespoons finely chopped green onion (white and light green parts)
  • 2 cups shredded cooked chicken breast
  • 0.25 cup finely chopped green onion (white and light green parts)
  • salt and freshly ground black pepper to taste
Instructions:
  • Crisp bacon in a skillet over medium heat for about 10 minutes, then transfer to a bowl using a slotted spoon, keeping 2 tablespoons of bacon fat in the pan.
  • Place the skillet back on medium heat. Sauté onion and celery with a pinch of salt until the onion starts to soften, approximately 5 minutes. Incorporate green bell pepper, red bell pepper, and garlic; continue cooking and stirring until the bell peppers are tender, around 5 minutes.
  • Drizzle vegetable oil into the onion mixture, add flour, and simmer until the flour is golden and the mixture thickens, approximately 5 minutes. Stir in 1 teaspoon each of black pepper, paprika, oregano, and cayenne pepper, mixing well.
  • Add 1/4 cup of chicken broth to the vegetables, stirring and scraping browned bits from the bottom. Pour in the rest of the broth and Worcestershire sauce. Turn up the heat, simmer until the sauce thickens slightly, approximately 10 minutes.
  • Lower the heat and introduce the andouille sausage, chicken, and set-aside bacon. Cook until piping hot.
  • Take the mixture off the heat, then gently incorporate the green onions, and generously season with salt and black pepper to enhance the flavors.
