Cajun Jambalaya Stuffing

Savory turkey and rice stuffing - a delicious twist on a classic favorite.
Ingredients:
  • 1 package (8 ounces) fat-free smoked turkey sausage, diced
  • 2 teaspoons vegetable oil
  • 1 large onion, chopped (1 cup)
  • 1 small green bell pepper, coarsely chopped (2/3 cup)
  • 1/4 cup finely chopped fresh parsley
  • 1 large clove garlic, finely chopped
  • 1 1/2 cups uncooked long-grain white rice
  • 1 can (10 1/2 ounces) condensed chicken broth
  • 1 1/3 cups water
  • 1 teaspoon Cajun seasoning for poultry
Instructions:
  • Sear sausage in a large nonstick skillet over medium heat for 3 to 5 minutes, stirring occasionally, until golden brown. Transfer the sausage to a plate and set it aside.
  • Heat oil in the same skillet over medium-high heat. Sauté onion, bell pepper, parsley, and garlic for 3 to 5 minutes until onion is tender. Add rice and cook for about 3 minutes until rice is golden brown, stirring occasionally.
  • Combine sausage, broth, water, and Cajun seasoning in a pot. Bring to a boil, then simmer on low heat for 18-20 minutes until rice is tender and liquid is absorbed. Proceed to use this flavorful stuffing to fill a 10- to 12-pound turkey.
