Quick and delicious jambalaya made with instant brown rice, smoked sausage, and canned cooked chicken.
Ingredients:
  • 8 ounces smoked sausage, sliced into 1/4-inch rounds
  • 1 tablespoon canola oil
  • 1 celery stalk, diced
  • 1 yellow bell pepper, diced
  • 0.5 onion, diced
  • 1 (10 ounce) can chunk chicken breast, drained and flaked
  • 1.5 teaspoons Cajun seasoning
  • 1 (16 ounce) can chicken broth
  • 1 (16 ounce) can diced tomatoes
  • 2 cups instant brown rice
Instructions:
  • 1. Bring a large pot of water to a boil, then boil the sausage until hot, for 8 to 12 minutes. Drain well.
  • In a pot over medium-high heat, heat canola oil and sauté sausage, celery, bell pepper, and onion until vegetables begin to soften, approximately 5 minutes.
  • Add the chicken seasoned with Cajun spices to the vegetables. Pour in the broth and tomatoes and bring to a boil. Add the rice and stir well. Cover and simmer for 5 minutes. Remove the cover, stir, and continue simmering until the rice is tender and has absorbed the liquid, about 5 more minutes.
