Vermicelli pasta with zesty Cajun tomato sauce, gooey mozzarella, and savory Parmesan cheese.
Ingredients:
  • 1 pound vermicelli pasta
  • 1 teaspoon minced garlic
  • 13 roma (plum) tomatoes, chopped
  • 1 tablespoon salt
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon Cajun seasoning
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
Instructions:
  • 1. Boil salted water in a large pot. Add pasta and cook until al dente, about 8 to 10 minutes. Drain.
  • While the pasta water boils, saute garlic in oil in a large skillet over medium heat. Add tomatoes with their juice and sprinkle with salt. Once tomatoes bubble, lightly mash with a fork. Mix in parsley, lower heat, and simmer for an additional 5 minutes.
  • Combine hot pasta with a savory blend of tomato sauce, Cajun seasoning, gooey mozzarella, and sharp Parmesan.
